Summer is right around the corner, or at least I’m telling myself that in this 60 degree weather. I am loving the sunshine that seems to improve just about everybody’s moods. Maybe it’s just me, but when I’m in a good mood I am usually also in the mood for chocolate. I decided to take a lighter route to one of my favorite flavors and whipped up these coconut bars!

Skinny No Bake Coconut Bars Recipe (3)

I used sweetened coconut, but if you’re wanting an even “lighter” recipe, raw coconut works too! You can also substitute the dark chocolate for milk, or semi-sweet.

Now I'm definitely craving these - have to make these up and then share them with others so I don't gobble them up all by myself!

  2. Shirley Sandifer says:

Definitely going to make these.Question about your name "Six Sisters" - are there really six sisters? We were four sisters at my house.

  3. Cyd says:

Hi Shirley. Yes, 6 sisters - no brothers. There is 12 years from the oldest to the youngest. You had a busy house too with 4 sisters!! :)

  4. Joell Zeeman says:

I swear I watched a movie on YouTube that one of you had made homemade bean burritos in the Hot Pot but I cannot find your recipe anywhere. My daughter wanted to try the recipe. Help? Lol

  5. Kathy says:

Can you use something else for the coconut oil? I had 4 brothers! One sister, nine years from oldest to youngest!

  6. Tasha says:

Can I substitute the coconut oil? I don’t have any on hand!

  7. Cyd says:

There are a lot of things you can substitute for coconut oil. But it will alter the taste and calories. This is what I found online - What are the best substitutes for coconut oil?Olive oil.Sunflower oil.Almond oil.Avocado oil.Hemp seed oil.Grapeseed oil.Walnut oil.

  8. Cyd says:

  11. Momma Cyd says:

With our new website redo, we are making the nutritional info available on all of our recipes. But with over 3000, it will take a little time.

  12. ozzie says:

i can't find coconut oil what can i use instead?

  13. Momma Cyd says:

Coconut oil is what will work best with these bars, especially where they are coconut bars - you'll want that coconut flavor. But here is a link to coconut oil substitutes. It will definitely change the flavor of the bars. You can order Coconut oil on amazon. It's also found at WalMart.

  14. Mike and Kelly Gallagher says:

This recipe sounds great for when you need that sweet treat, but it says it is 600 calories per piece? Is that correct?

  15. Momma Cyd says:

That was with the pan cut into 6 pieces which would be huge. We've adjusted the recipe and now have the pan cut into 16 pieces, but you could easily cut them smaller.
