When I was creating this Hummus recipe 4 ways, it was originally only going to be 3, but I had some roasted red peppers lying around so I figured I would give you a little bonus by adding them in to a fourth recipe variation!

Hummus is incredibly easy to make, it only consists of 6 ingredients and most recipes usually just involve putting things into a food processor and letting it roll until smooth. To start on my favorite hummus recipes though, we need to do a bit of cooking. Begin by roasting the beets in a bit of olive oil and salt and pepper.

I prefer to keep both ends on to keep all the juice allowing for more flavor and color. They take 34-40 minutes on 400¬∞. Once they’re done in the oven, peel them and cool ’em down a bit before processing with the other ingredients.

Now because I’m Italian, I plan on putting roasted garlic into all of these hummuses because it is my belief that it really enhances the flavors of each and it goes well with the additional ingredients I’ll be adding in to make them unique i.e. avocado, roasted red pepper and beets. Easiest way to roast garlic? Olive oil’em up and put ’em cut side down on a ceramic dish, cover and cook for 40 minutes on 400¬∞. You’re welcome 🙂

Believe it or not I’m purist when it comes to a lot of things within the culinary world, and while it’s certainly easy and 100% acceptable and normal to use a food processor (yes, I use it for 3 of the recipes), I love mashing things with a mortar and pestle.

It’s very authentic and natural and I’m a guy so smashing things is fun lol. I mean let’s be honest, it’s not like folks in the middle east had a robot coupe in the 13th century. Also, this one looks great on my reclaimed wood open shelving! Plus I like my hummus a little chunky so this is perfect for me.

Ok enough jibber jabber, let’s make this stuff. All of these recipes start with the basic hummus ingredients: chickpeas, olive oil, roasted garlic, lemon juice, tahini, salt, pepper and cayenne. From there it’s all about processing in those other ingredients.

Put the hummus ingredients plus some avocado and cilantro and hit it till it’s smooth!

Now place the hummus ingredients along with the roasted peeled beets and flip the switch to high until it too is smooth.

Lastly place the hummus ingr… you know what to do… Along with the roasted peppers and go!

For plating each of them up I added on a few unique garnishes to each to help them stand out. For instance, I put some queso freso on the avocado hummus, some goat cheese on the beet hummus and some feta on the roasted pepper hummus.

I kept the original recipe authentic with the addition of some extra virgin olive oil, cayenne and chopped chives as garnish.

Lastly, be sure to serve all of these hummus dips up with some warm pita bread… Mmmmmm so good!

INGREDIENTS

Hummus Recipe:

  • 2 strained 15-ounce cans of chickpeas
  • Juice of ½ lemon
  • ½ cup of tahini
  • ¼ cup of extra virgin olive oil + more for garnish
  • Pinch of cayenne pepper
  • 6 to 8 cloves of roasted garlic
  • Kosher salt and pepper to taste
  • Chopped chives for garnish
  • Warm pita bread for serving

Avocado:

  • 1 hummus recipe
  • 1 peeled and seeded avocado
  • ¼ cup of cilantro leaves + more for garnish
  • Queso fresco for garnish

Beet:

  • 1 hummus recipe
  • 3 roasted and peeled red beets
  • Goat cheese for garnish
  • Chopped parsley for garnish

Roasted Red Pepper:

  • 1 hummus recipe
  • 3 roasted red peppers
  • Feta cheese for garnish
  • Chopped parsley for garnish

INSTRUCTIONS

Hummus:

  1. In a food processor or using a mortar and pestle, combine the chickpeas, lemon juice, tahini, olive oil, roasted garlic, cayenne and salt and pepper until smooth or slightly chunky.
  2. Garnish with additional olive oil, cayenne and chives. Serve with warm pita.

Avocado:

  1. Process together the hummus ingredients along with an avocado and cilantro leaves until smooth or slightly chunky.
  2. Garnish with queso fresco and cilantro leaves.

Beet:

  1. Process together the hummus ingredients along with the beets until smooth or slightly chunky.
  2. Garnish with goat cheese and parsley.

Roasted Red Pepper:

  1. Process together the hummus ingredients along with the roasted red peppers until smooth or slightly chunky.
  2. Garnish with feta cheese and parsley.
