In honor of my recent birthday and love of cake, I am sharing 5 incredible paleo birthday cake recipes in this post!

I got to spend my day of turning 24 years old in Rotterdam, Netherlands, and it wasamazing.

Did you hear yet about how Ryan and I got $200 round trip tickets to the Netherlands? Well, we’re still here. Both of us work from home and that means spending two weeks here was doable! (The real thanks for that goes to my sister and her husband for being willing to let us crash their couches this long.)

Ryan is the bestat planning surprises for me. This morning he whisked me away to a delicious breakfast of fresh and real food(click for my Instagram photo!) at Lilith, followed by some bike riding around the beautiful city, trying new tea flavors at The Tea Lab, and enjoying amazing pho at Pho Hanoi (a hidden gem).

Unfortunately, my sister and her husband were home sick today, but we had really yummy chicken and fries delivered for dinner. (Yes, fries. Rotterdam has some of the most incredible fries I’ve had in my life, and they dip them in mayo. Don’t mock it til you try it.)

My brother-in-law, though sick, also went and got me yummy gluten-free brownies, and Ryan and I had gotten cocos at the famous local indoor market, Markthal, earlier in the day to enjoy at dinner. Cocos are homemade coconut pastries made without flour, and they’re my favorite dessert I’ve had here!

Moral of the story: My birthday revolved around food and I’m really happy about that!

I’ll be honest though, I missed having cake today. Cake is probably my favorite category of dessert, tied with cobblers.

My sister and her husband live in a small, minimalistic apartment, and they don’t have an oven. Making a cake without an oven isn’t really possible, so it just didn’t happen for me this year. I realized today, though, that I’ve never actually made a paleo cake, aside from a mug cake. And that got me searching. Are there good paleo cake recipes out there, that aren’t super difficult to make?

The answer is yes, yes there are. And lucky for you, (and for me when I have an oven to bake in again), I put together 5 paleo birthday cake recipes that I think look absolutely decadent (and not too difficult).

As much as I love chocolate, a piece of moist vanilla cake with yummy frosting usually tempts me more than chocolate cake would. And this recipe looks delicious. Made with a combination of coconut and almond flours, this recipe is also one I already have all the ingredients to make in my kitchen (which I love)!
